Ingredients
  

  • 1/2 Cup Unsalted Butter
  • 1/2 Cup All Purpose Flour
  • 4 Cups Turkey Stock
  • 1 Small Onion
  • 2 Sprigs Fresh Thyme
  • 1 Tsp Salt
  • 1/2 Tsp Black Pepper
  • 1 Tsp Worcestershire Sauce

Instructions
 

  • Sauté the Aromatics: First, melt a little butter in the pan. Add chopped onions and herbs. Cook them until they smell very good.
  • Make the Roux: Add the rest of the butter. Let it melt completely. Whisk in the flour slowly. Cook it until it turns golden brown.
  • Add the Liquid: Pour in the stock very slowly. Keep whisking while you pour. This prevents any flour clumps from forming.
  • Simmer and Thicken: Let the gravy bubble gently. Turn the heat down to low. Stir it often for ten minutes. It will become thick and glossy.
  • Season to Taste: Add your salt and pepper now. Stir in the Worcestershire sauce. Taste it to see if it is perfect.
  • Strain the Gravy: Pour the mixture through a strainer. This removes the onion bits and herbs. You are left with pure silk.
