- 4 large thinly sliced onions
- 6 cups beef broth
- 2 cups shredded Gruyere cheese
- 2 tbsp unsalted butter
- ¼ cup dry sherry
- 2 tbsp olive oil
- 1 bay leaf
- 1 tsp sugar
- 2 sprigs fresh thyme
- 2 cloves minced garlic
- Salt and black pepper to taste
- Baguette slices as needed
Step 1. Cook:
Take a large pot, and if you are bold enough in cooking, try the Dutch oven.
Add olive oil and butter and make them one entity.
Then add onion slices, warning: don’t let them rest, just keep bothering them frequently with a spoon.
Make them golden brown with a good cooking of 30-40 minutes.
Bless the cooked onions with the aroma of garlic, sweeten them with some sugar and cook again for 5 minutes.
Step 3. Add Broth:
Add the beef broth to the onion mix and let them float in the broth.
Give a French touch by adding bay leaf and fresh thyme.
Simmer for 20-30 minutes.
