Boil macaroni until al dente. Drain and set aside.
Melt butter in a large saucepan over medium heat.
Whisk in flour to make a roux. Stir for 2-3 minutes.
Gradually add milk, whisking to avoid lumps. Cook until thick.
Reduce heat, add cheddar and colby jack cheeses. Stir until melted.
Season with salt, black pepper, and paprika. Adjust to taste.
Combine macaroni with cheese sauce, coating well.
Prepare the oven by preheating it to 350°F (175°C).
Place the mixture in a baking dish. Sprinkle breadcrumbs on top.
Until golden brown and bubbly, bake for 30-35 minutes.
