Ingredients
  

  • 1 lb ground beef 80/20
  • 1/2 cup breadcrumbs
  • 1 egg beaten
  • 3 cloves garlic minced
  • 1 tsp fresh ginger grated
  • 2 green onions finely chopped
  • Salt and pepper to taste
  • 1/4 cup soy sauce
  • 3 tbsp brown sugar
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tsp Korean chili flakes
  • 1/2 cup mayonnaise
  • 1 tbsp sriracha sauce
  • 1 tsp rice vinegar
  • 1/2 tsp garlic powder

Instructions
 

  • Preheat oven to 400°F.
  • Line baking sheet with parchment paper.
  • Mix all meatball ingredients in large bowl.
  • Form mixture into 1-inch balls.
  • Place meatballs on prepared baking sheet.
  • Bake for 15-18 minutes until cooked.
  • Combine all BBQ sauce ingredients in saucepan.
  • Simmer sauce for 3-4 minutes until thick.
  • Toss cooked meatballs with BBQ sauce.
  • Mix all spicy mayo ingredients together.
  • Serve meatballs with spicy mayo dip.

Notes

  1. Don't overmix the meatball mixture to keep them tender
  2. Use a cookie scoop for evenly sized meatballs
  3. Let meatballs rest 5 minutes before serving for better flavor
  4. Double the sauce recipe if you prefer extra glaze
  5. Adjust sriracha amount in mayo dip to taste preference
