Ingredients
  

  • 2 cups all-purpose flour
  • 3 large eggs
  • 1/2 cup milk
  • 1 tsp salt
  • 1 1/2 cups Gruyère cheese grated
  • 1 cup Emmental cheese grated
  • 2 large onions sliced
  • 3 tbsp butter
  • Salt and pepper to taste

Instructions
 

  • Mix flour and salt in large bowl.
  • Beat eggs with milk until smooth.
  • Combine wet ingredients with flour mixture.
  • Stir until dough becomes thick and sticky.
  • Boil salted water in large pot.
  • Press dough through spätzle maker into water.
  • Cook spätzle for 2-3 minutes until floating.
  • Remove with slotted spoon and drain.
  • Melt butter in skillet over medium heat.
  • Add sliced onions and cook until golden.
  • Layer spätzle with grated cheese in bowl.
  • Top with crispy onions and serve immediately.

Notes

  1. The dough should be thick but not dry for perfect spätzle.
  2. Grate cheese yourself for better melting and flavor.
  3. Spätzle should be tender but not mushy when done.
