- Coriander seeds = 2 Tbsps
- Cardamom pods = 1 Tbsp
- Black peppercorns = 1 tsp
- Dried chili flakes = 1 tsp
- Turmeric powder = 2 tsps
- Ground cinnamon = 1 tsp
- Ground ginger = 1 tsp
- Nutmeg freshly grated = ½ tsp
Start by toasting cumin and coriander seeds in a dry pan.
Stir constantly to stop burning.
Toast until fragrant, about 2-3 minutes. This step releases oils and boosts flavor.
Move the toasted seeds to a spice grinder.
Add cardamom pods (without the shells) and black peppercorns.
Grind them to a fine powder. The aroma will now reveal the spice’s magic.
Pour the ground spices into a bowl. Add dried chili flakes, turmeric, cinnamon, ginger, and nutmeg.
