Ingredients
  

  • Cumin seeds = 2 Tbsps
  • Coriander seeds = 2 Tbsps
  • Cardamom pods = 1 Tbsp
  • Black peppercorns = 1 tsp
  • Dried chili flakes = 1 tsp
  • Turmeric powder = 2 tsps
  • Ground cinnamon = 1 tsp
  • Ground ginger = 1 tsp
  • Nutmeg freshly grated = ½ tsp

Instructions
 

  • Start by toasting cumin and coriander seeds in a dry pan.
  • Stir constantly to stop burning.
  • Toast until fragrant, about 2-3 minutes. This step releases oils and boosts flavor.
  • Move the toasted seeds to a spice grinder.
  • Add cardamom pods (without the shells) and black peppercorns.
  • Grind them to a fine powder. The aroma will now reveal the spice’s magic.
  • Pour the ground spices into a bowl. Add dried chili flakes, turmeric, cinnamon, ginger, and nutmeg.
  • Whisk everything together until well-mixed. Now your Issou spice blend is ready to enjoy!

  • Adjust the cayenne if you like more or less heat.
  • You can mix the ingredients and store them for months.
