Ingredients
  

  • 1 pound ground beef 80/20 blend
  • 4 burger buns preferably brioche
  • 1 large onion sliced
  • 4 slices Irish cheddar cheese
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons butter
  • 4 tablespoons mayonnaise
  • 2 tablespoons Dijon mustard

Instructions
 

  • Mix ground beef with Worcestershire sauce in bowl.
  • Add garlic powder, thyme, salt, and pepper.
  • Form mixture into four equal patties.
  • Heat cast iron skillet over medium-high heat.
  • Cook onions in butter until golden brown.
  • Remove onions and set aside.
  • Cook burger patties for 4 minutes per side.
  • Add cheese slices during last minute.
  • Toast buns lightly in same skillet.
  • Spread mayo and mustard on bun bottoms.
  • Layer patty, cheese, and caramelized onions.
  • Top with remaining bun half.

Notes

  1. Use 80/20 ground beef for optimal juiciness and flavor
  2. Don't overwork the meat when forming patties
  3. Make small indent in center to prevent puffing
  4. Let patties rest at room temperature before cooking
  5. Cook onions slowly for maximum sweetness and caramelization
