Large Sauté Pan
Large Mixing Bowl
Measuring Cups
Cheese grater
- 2 lbs YUKON GOLD POTATOES
- 1 large FENNEL BULB
- 2 medium YELLOW ONIONS
- 2 cups HEAVY CREAM
- 2 cups GRUYERE CHEESE
- 4 tbsp UNSALTED BUTTER
- 2 tbsp ALL PURPOSE FLOUR
- 1 tsp KOSHER SALT
- 1/2 tsp BLACK PEPPER
Peel your potatoes and slice them into thin rounds. Slice the fennel and onions into very thin pieces too. This ensures everything cooks at the same speed together.
Melt the butter in your large sauté pan now. Add the onions and fennel to the hot pan. Sauté them over medium heat until they are soft.
Stir the flour into the cooked vegetables very slowly. Cook for one minute to remove the raw flour taste. This starts the thickening process for your cream sauce.
Pour the heavy cream into the pan with veggies. Stir until the sauce starts to bubble and get thick. Remove it from the heat and add some salt.
Layer the sliced potatoes in your greased baking dish. Pour the warm cream and onion mixture over the potatoes. Toss them gently to coat every single potato slice.
Top the dish with plenty of grated Gruyere cheese. Bake at 350 degrees until the top is golden brown. Let it sit for ten minutes before you serve.
- Slice the potatoes to an even and thin size.
- Sauté the fennel until it is very soft today.
- Use fresh Gruyere cheese for the best melted top.
- Do not boil the cream too hard in pan.
- Let the dish rest before cutting into it now.
- Grease your baking dish well to prevent any sticking.
- Use Yukon Gold potatoes for the best creamy texture.
- Add extra cheese if you like a thicker crust.
