- 3 large BANANAS
- 2 cups ALL-PURPOSE FLOUR
- 1/2 cup UNSALTED BUTTER
- 1 cup GRANULATED SUGAR
- 2 large EGGS
- 1 tsp VANILLA EXTRACT
- 1 tsp BAKING SODA
- 1/2 tsp SALT
Preheat your oven to 350 degrees right now. Grease your loaf pan with a little butter. Dust it lightly with some extra flour too.
Mash your bananas in a small bowl now. Use a fork to make them very smooth. Set the mashed fruit aside for a moment.
Cream the butter and sugar in a bowl. Use your mixer until it looks very fluffy. This should take about two minutes total.
Add the eggs to the butter mix. Pour in the vanilla extract very carefully now. Mix again until the liquid is very smooth.
Sift the flour and baking soda together. Add the salt to the dry mixture now. Stir gently to combine all the dry items.
Slowly add the dry ingredients to the wet. Do not over-mix the batter today. Stop as soon as the flour disappears.
Fold in the mashed bananas with a spatula. Pour the batter into your prepared loaf pan. Smooth the top with the back of a spoon.
Bake the loaf for about fifty minutes. A toothpick should come out very clean. Let it cool before you try a slice.
- Always use bananas that are very brown and soft.
- Do not over-mix the batter after adding flour.
- Make sure your butter is truly at room temperature.
- Check the oven temperature with a small thermometer.
- Let the bread cool in the pan first.
