Ingredients
  

For the Crust:

  • Graham cracker crumbs = 1½ cups
  • Granulated sugar = ¼ cup
  • Unsalted butter melted = ½ cup

For the Filling:

  • Cream cheese softened = 24 oz.
  • Granulated sugar = 1 cup
  • Eggs = 3 large
  • Sour cream = ¼ cup
  • Honey = ¼ cup
  • Vanilla extract = 1 tsp
  • All-purpose flour = 2 tbsp

For the Swirl:

  • Brown sugar = ¼ cup
  • Ground cinnamon = 1 tsp

For the Glaze:

  • Powdered sugar = ½ cup
  • Milk = 1-2 tbsp
  • Vanilla extract = ½ tsp

Instructions
 

Prepare the Crust:

  • Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan.
  • In a bowl, mix graham cracker crumbs, sugar, and melted butter.
  • Press the mixture into the bottom of the pan.
  • Bake for 8-10 minutes. Let it cool.

Make the Filling:

  • Beat cream cheese and sugar until smooth.
  • Add eggs one at a time. Mix well after each.
  • Stir in sour cream, honey, vanilla extract, and flour. Mix until smooth.

Prepare the Swirl:

  • In a small bowl, mix brown sugar and cinnamon.

Assemble the Cheesecake:

  • Pour half of the cream cheese mixture over the crust.
  • Sprinkle half of the cinnamon swirl mixture on top.
  • Repeat with the remaining cream cheese mixture and swirl.

Bake:

  • Bake for 45-50 minutes, until almost set in the center.
  • Let it cool completely on a wire rack in the pan.
  • Refrigerate for 4 hours or overnight.

Prepare the Glaze:

  • Whisk powdered sugar, milk, and vanilla extract until smooth.
  • Drizzle over the chilled cheesecake before serving.

Notes

  • Make sure your cream cheese is not cold. This helps it mix better and stay smooth.
  • Don’t mix too much. Just mix until everything is blended for a smooth filling.
  • Press the crust mixture down firmly in the pan. This keeps it from falling apart.
  • When adding the cinnamon swirl, use a knife to gently swirl it into the batter. This makes a nice marble pattern.
  • Let the cheesecake cool completely before adding the glaze. This keeps the glaze from melting.
