Ingredients
  

  • 225 grams SELF-RAISING FLOUR
  • 2 tsp GROUND GINGER
  • 1 tsp GROUND CINNAMON
  • 100 grams UNSALTED BUTTER
  • 100 grams DARK MUSCOVADO SUGAR
  • 100 grams BLACK TREACLE
  • 100 grams GOLDEN SYRUP
  • 150 ml WHOLE MILK
  • 2 large EGGS

Instructions
 

  • Preheat your kitchen oven to 160°C before you begin. Line your loaf tin with the baking parchment paper carefully. Ensure the paper sticks up over the sides for easy lifting.
  • Weigh your self-raising flour, ground ginger, and cinnamon together. Put these dry ingredients into your large mixing bowl. Stir them with a spoon to mix the spices evenly.
  • Place the butter, muscovado sugar, treacle, and golden syrup together. Put them into your medium saucepan over a low heat. Melt them slowly until the liquid is completely smooth.
  • Pour the warm melted syrup mixture into your dry ingredients. Add the whole milk and cracked eggs into the bowl next. Stir everything together gently until a smooth batter forms.
  • Pour the liquid cake batter into your lined loaf tin. Tap the tin on the counter to pop large bubbles. Bake in the hot oven for about fifty minutes safely.
  • Insert a wooden skewer into the center of your cake. It should come out clean when the cake is ready. Let it cool in the tin before you slice it.
