Ingredients
  

  • Black peppercorn = 2 tsp
  • Kosher salt = 2 tbsp
  • Brown sugar = 2 tbsp
  • Mustard powder = 2 tsp
  • Chili powder = 2 tsp
  • Garlic powder = 2 tsp
  • Paprika = 2 tsp
  • Cayenne pepper = 2 tsp
  • Cumin seeds = 2 tsp
  • Vegetable oil = 4 tbsp
  • Chicken wings = 4 lbs

Instructions
 

  • Grind cumin seeds. Mix black peppercorn, kosher salt, garlic powder, brown sugar, cayenne pepper, chili powder, mustard powder, paprika, and ground cumin in a bowl. Blend well, or use a food processor for a coarser mix.
  • Add vegetable oil to the spice mixture to make a paste.
  • Place chicken wings in a bowl. Coat wings evenly with the spice paste. Massage to enhance flavor.
  • Cover and refrigerate wings for at least 2 hours, or overnight for richer flavor.
  • Preheat grill to medium-high. Alternatively, preheat oven to 400°F.
  • For Grill: Cook wings on each side for 10 minutes (total 20 minutes).
  • For Oven: Line a baking sheet with foil. Bake wings for 30 minutes, flipping after 15 minutes.
  • After cooking, let wings cool briefly. Serve with your favorite dipping sauce. Enjoy!

Notes

  • Start with a little Desert Heat Dry Rub and add more if you like it spicier.
