  • Low fat flour tortillas 6 to 7 inches = 2
  • Lump crabmeat drained = 1 (6 oz.) can
  • Diced ripe avocado = 1/3 cup
  • Diced ripe tomato = 1/3 cup
  • Chopped cilantro or thinly sliced green onions = 1/4 cup

Instructions
 

  • Place two slices of cheese on each tortilla.
  • In a bowl, combine crabmeat, avocado, tomato, and cilantro.
  • Mix the ingredients lightly until combined.
  • Spoon the mixture onto each tortilla.
  • Fold the tortillas in half to enclose the filling.
  • Heat a large nonstick skillet over medium heat.
  • Lightly coat the skillet with cooking spray.
  • Add the quesadillas to the skillet.
  • Cook for 3 to 4 minutes on each side.
  • Look for a golden brown color and melted cheese.
