Ingredients

  • 3 large zucchinis washed and ends trimmed.
  • 3 tablespoons of extra-virgin olive oil.
  • 3 cloves of garlic finely minced.
  • 1/2 teaspoon of dried oregano or Italian seasoning.
  • 1/4 teaspoon of red pepper flakes optional for heat.
  • 1/2 cup of grated Parmesan cheese.
  • 1 cup of shredded mozzarella cheese.
  • 2 tablespoons of fresh parsley chopped.
  • Salt and black pepper to taste.

Instructions

Prep the Oven

  • Preheat your oven to 400°F (about 200°C). Line your baking sheet with parchment paper to prevent the cheese from sticking.

Slice the Steaks

  • Cut each zucchini lengthwise into 1/2-inch thick planks or "steaks." You should get about 3 to 4 slices per zucchini.

Score the Flesh

  • Using the tip of your knife, lightly score a crosshatch pattern into the top of each zucchini slice. This helps the garlic oil sink in.

Make Garlic Oil

  • In a small bowl, whisk together the olive oil, minced garlic, oregano, salt, pepper, and red pepper flakes.

Brush the Zucchini

  • Arrange the steaks on the baking sheet. Brush the garlic oil mixture generously over the top of each slice.

First Roast

  • Place the tray in the oven and roast for 12 to 15 minutes. The zucchini should be tender but still hold its shape.

Add the Cheese

  • Remove the tray and sprinkle the Parmesan and mozzarella cheeses evenly over each steak.

Broil to Golden

  • Return to the oven and bake (or broil) for another 3 to 5 minutes until the cheese is melted, bubbly, and has golden brown spots.

Notes

  • Score the tops. Making those little diamond cuts on the surface allows the garlic and oil to penetrate deep into the vegetable for better flavor.
  • Don't over-roast. Zucchini has a high water content. If you cook it too long before adding cheese, it can become mushy.
  • Use fresh garlic. While garlic powder works in a pinch, fresh minced garlic provides a much more aromatic and bold punch.
  • Pat them dry. After slicing, pat the zucchini steaks with a paper towel to remove excess moisture before oiling.
  • Choose large zucchinis. For "steaks," larger zucchinis are better because they provide a wider surface area for the cheese toppings.
  • Add a crunch. Mixing a tablespoon of Panko breadcrumbs with the Parmesan adds a wonderful texture to the soft zucchini.
