I just love how the Cheesecake Factory Godiva crafts their Chocolate Cheesecake. Totally into this delight, I got this recipe from my mother and since then, I make it at least once a month.

For Crust:
- Semi-sweet chocolate: 4 oz
- Butter: ½ cup
- Sugar: ¾ cup
- Cocoa powder: ½ cup
- Eggs beaten: 3
- Vanilla extract: 1 tsp
For Chocolate Cheesecake:
- Softened cream cheese: 16 oz
- Sugar: ½ cup
- Eggs: 2
- Sour cream: 1-⅓ cups
- Vanilla extract: ¾ tsp
- Bailey’s Irish cream: ¼ cup
- Semi-sweet chocolate: 6 oz
For Dark Chocolate Mousse:
- Bittersweet chocolate: 5-¼ oz
- Cold heavy cream: 14 oz
- Large egg whites: 3
- Sugar: 1 oz
For Ganache Glaze:
- Bittersweet chocolate: 4 oz
- Heavy whipping cream: ½ cup
- Light corn syrup: 2 tsp
Step 1. Prepare Crust:
Just do the first step like a habit, the oven preheating. Keep the temperature 300 degrees F.
Then take the 9-inch springform pan and grease it. You now need to line it with parchment paper and apply the greasing again. Then powder with cocoa powder as well.
Melt chocolate and butter on a boiler over simmering water to allow a uniform melting. Then add sugar, cocoa powder, eggs, and vanilla in this mixture and pour it into the pan.
Bake in the oven for half an hour.
Smush to make a thin crust and cool down at room temperature.
Step 2. Prepare the Cheesecake:
Do a preheating again, but this time at 325 degrees F.
Find the largest mixing bowl in your kitchen to make the cheesecake mixture.
Add sugar and cream cheese in the bowl and beat them to fluff. Then add eggs to do their magic.
Lastly add Irish cream, vanilla, and sour cream. Mix them well to get them acquainted. Afterall, they are gonna blow your mind afterwards.
Don't forget to add in melted chocolate at the end.
Pour this mixture over the waiting crust and bake for 90 minutes.
Take out and cool to room temperature.
Then cover with aluminum foil and refrigerate.
Step 3. Prepare the Mousse:
Melt the chocolate and then bring it to room temperature.
Beat the cream to make soft peaks. Separately whip eggs to soft peaks.
Add sugar and keep whipping until firm peaks.
Now take the twin of the largest bowl and add the melted chocolate in it.
Fold in egg whites and whipped cream one by one.
Pour this amazing mousse on the top of your chilled cheesecake. Refrigerate until you make the ganache.
Step 4. Prepare the Ganache:
Now melt the chocolate for one last time, promise this one’s last ;-).
Boil the cream and pour it over the chocolate. You need to whisk them with your heart to smoothen them.
Just when they become one, add corn syrup. Again mix.
Cool the mixture. Not too much, just a little.
Spread it over the mousse layer and make it dripping from the sides so that it looks more yummy.
Sprinkle cocoa powder for a crazier look.
Cover with aluminum foil and chill again.
