Add chopped onions and jalapeños to the pan.

While they cook, prepare the feta cheese.
Break feta cheese into pieces by hand.
Place the feta in a food processor or blender.
Add ¼ cup of olive oil to the processor.
Blend the feta until it is smooth and creamy.
Stop to scrape the sides every minute if needed.
Transfer the smooth feta to a large bowl.
Add the cooked jalapeños and onions to the bowl.
Stir everything together until well combined.
For extra spice, add some jalapeño seeds.
If not serving right away, store in the fridge.
Let it sit at room temperature before serving.
