Ingredients
  

  • 2 lbs chicken pieces thighs and drumsticks
  • 2 cups jasmine rice
  • 1 can coconut milk 14 oz
  • 2 cups chicken broth
  • 1 scotch bonnet pepper optional
  • 1 large onion diced
  • 3 garlic cloves minced
  • 2 tsp curry powder
  • 1 tsp allspice
  • 1 tsp thyme
  • Salt and pepper to taste
  • 2 tbsp vegetable oil

Instructions
 

  • Season chicken with curry powder and salt.
  • Heat oil in large pot over medium heat.
  • Brown chicken pieces on all sides completely.
  • Remove chicken and set aside temporarily.
  • Add onions and garlic to same pot.
  • Cook until onions become soft and translucent.
  • Add rice and stir for two minutes.
  • Pour coconut milk and chicken broth slowly.
  • Add scotch bonnet pepper if using it.
  • Return chicken pieces to the pot carefully.
  • Bring mixture to a rolling boil quickly.
  • Reduce heat and cover pot tightly.
  • Simmer for 25 minutes without lifting lid.
  • Let stand 5 minutes before serving hot.

Notes

  1. Use chicken thighs for more flavor and moisture
  2. Don't lift the lid while rice is cooking
  3. Toast rice briefly for better texture and taste
  4. Adjust scotch bonnet pepper for preferred heat level
  5. Let chicken marinate longer for deeper flavor development
