Ingredients
  

  • 2 lbs ground beef 80/20
  • 1 cup breadcrumbs
  • 2 eggs beaten
  • 1 onion diced
  • 2 garlic cloves minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup balsamic vinegar
  • 1/4 cup brown sugar
  • 2 tbsp ketchup
  • 1 tsp Worcestershire sauce

Instructions
 

  • Preheat oven to 375°F degrees.
  • Mix all meatloaf ingredients in large bowl.
  • Shape mixture into loaf pan evenly.
  • Bake for 30 minutes initially.
  • Meanwhile, combine glaze ingredients in small saucepan.
  • Simmer glaze until it thickens slightly.
  • Brush half the glaze over meatloaf.
  • Continue baking for 15 more minutes.
  • Apply remaining glaze before final cooking.
  • Cook until internal temperature reaches 160°F.
  • Rest meatloaf for 5 minutes before slicing.

Notes

  1. Don't overmix the meat to keep it tender.
  2. Use a meat thermometer for perfect doneness.
  3. Let the meatloaf rest before slicing completely.
  4. Make extra glaze for serving alongside slices.
  5. Add fresh herbs like thyme for extra flavor.
